Chocolate Chip Pancakes

When my husband is out of town we have special dinners...things like ravioli from the can, corn dogs, macaroni and cheese, and these babies. They truly are a special meal for my kids, and I don't mind them either!

Chocolate Chip Pancakes

1 1/2 cups all-purpose flour
1 1/2 tsps baking powder
3/4 tsp baking soda
3/4 tsp salt
1 1/4 cups milk
1/4 cup vegetable oil
2 large eggs, lightly beaten
Semisweet mini chocolate chips

1. Whisk together all ingredients except chips until just combined.
2. Heat a griddle over medium heat until hot and lightly brush with additional oil. Working in batches, pour 1/4 cup batter per pancake onto griddle and sprinkle each pancake with about 1 1/2 teaspoons chips. Cook until bubbles appear on surface and undersides are golden-brown, about 1 minute. Flip with a spatula and cook other side, about 1 minute more. (Lightly oil griddle between batches.)
Makes 10 pancakes
